Instructions
Preheat the oven to 325°F (160°C) and prepare an 8x8 inch baking pan by lining it with parchment paper.
In a medium-sized mixing bowl, combine the graham cracker crumbs, melted unsalted butter, and 2 tablespoons of granulated sugar. Stir until coated.
Press the crumb mixture into the bottom of the lined baking pan to create a compact crust. Bake for 10 minutes and let cool slightly.
In a large mixing bowl, beat the softened cream cheese with 3/4 cup of sugar until smooth and creamy.
Add the eggs one at a time, mixing well after each addition.
Fold in the sour cream, 2 teaspoons of matcha powder, vanilla extract, and a pinch of salt. Beat until smooth.
Pour the cheesecake filling over the crust, spreading it evenly. Tap the pan to release air bubbles.
Bake for 25-30 minutes until the edges are set and the center has a slight jiggle.
Cool to room temperature for about an hour, then refrigerate for at least 4 hours or overnight.
Lift the cheesecake out of the pan using the parchment overhang, cut into squares, and dust with extra matcha powder before serving.
Notes
For an elegant touch, serve these bars on a decorative platter and accompany them with fresh berries or a dollop of whipped cream.
