Instructions
Preheat your oven to 350°F (175°C). While the oven warms up, line a baking sheet with parchment paper to make cleanup a breeze.
In a medium mixing bowl, pour in the pure maple syrup, followed by the ground cinnamon, freshly grated nutmeg, fine sea salt, and the melted coconut oil (or butter). Whisk these ingredients together until they are well combined and smooth.
Gently add the pecan halves to the mixture in the bowl, using a spatula or wooden spoon to carefully stir until all the nuts are evenly coated in the luscious maple cinnamon blend.
If you choose to include the brown sugar for a sweeter finish, sprinkle it over the coated pecans and mix again until the sugar is well incorporated and clings to the nuts.
Transfer the coated pecans onto the prepared baking sheet, ensuring they are spread out in a single layer to allow for even roasting.
Place the sheet in the preheated oven and roast the pecans for about 15-20 minutes, stirring every 5 minutes. This stirring will help prevent burning and ensure an even golden color. The nuts are ready when they are fragrant and appear slightly darker in hue.
Once roasted to perfection, carefully remove the baking sheet from the oven and let the pecans cool completely while still arranged on the sheet—this step is key for achieving that perfect crispiness.
After they have cooled, gently break apart any clusters of pecans and transfer them to an airtight container. These delightful snacks can be enjoyed on their own or used as a crunchy topping for salads, desserts, or creamy yogurt.
