Instructions
Begin by preheating your oven to 400°F (200°C). For easy cleanup later, line a large baking sheet with parchment paper.
In a generous mixing bowl, add the cubed sweet potatoes, olive oil, honey, minced garlic, ground cinnamon, sweet paprika, sea salt, and black pepper.
Using a spatula or your hands, gently toss the sweet potatoes until each cube is thoroughly coated with the honey-garlic mixture.
Carefully spread the sweet potato cubes out in a single layer on the prepared baking sheet, ensuring space between each piece for even roasting.
Place the baking sheet in the preheated oven and roast for 25-30 minutes. Halfway through, stir the sweet potatoes to promote even caramelization and tenderness. They’re ready once they’re golden-brown and easily pierced with a fork.
Remove the baking sheet from the oven, allowing the sweet potatoes to cool for a few minutes. Then, transfer them to a lovely serving dish.
To finish, sprinkle the roasted sweet potatoes with finely chopped fresh parsley for a bright and fresh touch before serving.
Notes
Serve in a rustic bowl or platter, adding extra parsley for garnish.
