Crush the Oreos: Start by placing the Oreo cookies into a food processor. Pulse until they reach a fine crumb consistency. Once done, transfer the crumbs into a large mixing bowl.
Mix with Cream Cheese: To the bowl of Oreo crumbs, add the softened cream cheese and peppermint extract. Use a spatula or your hands to mix thoroughly until the mixture is well combined and forms a dough-like consistency.
Form Truffles: Take approximately one tablespoon of the mixture and roll it into a small ball, about 1 inch in diameter. Continue to roll until all the mixture is formed into truffles, placing each on a baking sheet lined with parchment paper as you go.
Chill: Place the baking sheet with the rolled truffles in the refrigerator and chill for about 30 minutes, or until they firm up considerably.
Melt the Chocolate: While the truffles are chilling, prepare the chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips with the coconut oil. Microwave the mixture in 30-second intervals, stirring well between each interval, until the chocolate is completely smooth and melted.
Coat the Truffles: Once the truffles are firm, remove them from the refrigerator. Use a fork to dip each chilled truffle into the melted chocolate, ensuring an even coating all around. Lift the truffle using the fork, letting any excess chocolate drip back into the bowl before placing it back onto the parchment-lined baking sheet.
Garnish: While the chocolate coating is still wet, generously sprinkle crushed mint-flavored candies on top of each truffle for a delightful crunch and festive appearance.
Set: Allow the coated truffles to sit at room temperature or return them to the refrigerator until the chocolate has completely hardened.
