Ingredients
  

  • 2 cups cooked chicken, shredded
  • 1 tablespoon chipotle peppers in adobo sauce, finely minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 cup sharp cheddar cheese, freshly grated
  • 1 cup Monterey Jack cheese, freshly grated
  • 1 small red onion, thinly sliced
  • 1 bell pepper any color, thinly sliced
  • 4 large flour tortillas
  • 2 tablespoons extra virgin olive oil

Instructions
 

  • In a spacious mixing bowl, thoroughly combine the shredded chicken, minced chipotle peppers, ground cumin, smoked paprika, and a generous pinch of salt and pepper. Stir well to evenly coat the chicken in the flavorful spices.
  • In a large skillet, heat 1 tablespoon of olive oil over medium heat. Once the oil is shimmering, add the thinly sliced red onion and bell pepper. Sauté for 5-7 minutes, stirring frequently, until the vegetables are tender and lightly caramelized. Remove the skillet from heat and set the sautéed vegetables aside on a plate.
  • Using the same skillet, add the remaining tablespoon of olive oil and promptly place one flour tortilla in the hot pan. On one half of the tortilla, evenly spread a generous portion of the spicy chicken mixture, followed by a hearty sprinkle of both the cheddar and Monterey Jack cheeses.
